The marinade not only enhances the chicken’s flavor but also keeps it moist and tender while grilling.

The chimichurri, a traditional Argentine sauce made with fresh herbs, garlic, and olive oil, adds an invigorating kick that complements the smoky grilled chicken beautifully. Perfect for a summer barbecue or a casual family dinner, this dish is relatively easy to prepare and can be enjoyed with a variety of sides, such as rice, beans, or a fresh salad.

The combination of the grilled chicken and the vibrant chimichurri will impress your guests and leave them asking for seconds. Let’s plunge into the ingredients and the cooking process to create this mouthwatering Brazilian dish.

    Ingredients (Serves 4-6):

    • 4-6 boneless, skinless chicken breasts
    • 1/4 cup olive oil
    • 2 tablespoons white vinegar
    • 4 cloves garlic, minced
    • 1 tablespoon paprika
    • 1 teaspoon cumin
    • Salt and black pepper to taste

    For the Chimichurri:

    • 1 cup fresh parsley, finely chopped
    • 1/4 cup fresh cilantro, finely chopped
    • 3 cloves garlic, minced
    • 1/2 teaspoon red pepper flakes (adjust to taste)
    • 1/2 cup olive oil
    • 2 tablespoons red wine vinegar
    • Salt and black pepper to taste

    Cooking Instructions:

    1. Prepare the Chicken Marinade: In a large bowl, combine olive oil, white vinegar, minced garlic, paprika, cumin, salt, and black pepper. Mix well to create a marinade. Add the chicken breasts and make sure they’re thoroughly coated. Cover the bowl with plastic wrap and refrigerate for at least 1 hour, or up to 4 hours for more flavor.
    2. Make the Chimichurri Sauce: In a separate bowl, mix together the finely chopped parsley, cilantro, minced garlic, red pepper flakes, olive oil, red wine vinegar, salt, and black pepper. Stir until well combined. Allow the sauce to sit for at least 30 minutes to let the flavors meld together.
    3. Preheat the Grill: Preheat your grill to medium-high heat. If using a charcoal grill, make sure the coals are hot and covered with white ash.
    4. Grill the Chicken: Remove the chicken from the marinade and shake off any excess. Place the chicken breasts on the grill. Cook for about 6-7 minutes on one side, then flip and grill for another 6-7 minutes, or until the internal temperature reaches 165°F (75°C) and the chicken is cooked through.
    5. Rest the Chicken: Once cooked, remove the chicken from the grill and let it rest for about 5 minutes. This allows the juices to redistribute, keeping the chicken moist.
    6. Serve: Slice the grilled chicken and serve it on a platter. Drizzle generously with chimichurri sauce and garnish with additional herbs if desired.

    Extra Tips:

For an extra layer of flavor, consider marinating the chicken overnight for a more intense taste. Additionally, feel free to customize the chimichurri by adding ingredients like oregano or lemon juice for a different twist.

Serve the chicken with warm crusty bread to soak up the delicious chimichurri sauce, and enjoy a taste of Brazil right at home!

    • Lemon slices (for garnish)
    • Fresh herbs (for garnish)

Place the chicken on the grill and cook for about 6-8 minutes on each side, or until the internal temperature reaches 165°F (75°C). Make sure to turn the chicken halfway through cooking for even grilling.
    5. Rest and Serve: Once cooked, transfer the chicken to a plate and let it rest for 5 minutes. This helps retain the juices within the chicken. Garnish with fresh cilantro and serve with lime wedges for an extra burst of flavor.

Extra Tips: For an even more authentic Brazilian experience, consider adding a touch of heat by including a chopped chili pepper in the marinade. Additionally, if you have the time, marinating the chicken overnight will yield even more flavorful results.

Finally, don’t forget to pair your Barbecue Chicken With Brazilian Flair with traditional sides like farofa (toasted manioc flour) or a fresh Brazilian salad to complete the meal. Enjoy your culinary adventure!

    Chicken Farofa

    savory brazilian chicken dish

Chicken Farofa is a traditional Brazilian dish that combines the savory flavors of seasoned chicken with farofa, which is toasted cassava flour mixed with various ingredients. This delightful dish is often served as a side or as a main course, bringing a taste of Brazil to your dining table.

Rich in textures and flavors, Chicken Farofa is perfect for family gatherings or festive occasions, providing a hearty and satisfying meal that everyone will enjoy.

To create Chicken Farofa, the chicken is typically marinated to infuse it with spices and herbs, then sautéed until golden brown. The farofa is prepared by toasting the cassava flour with onions, garlic, and a variety of other ingredients that add depth and flavor. This dish isn’t only delicious but also a wonderful way to experience Brazilian cuisine in your own home.

    Ingredients (serving size: 4-6 people)

    • 4 chicken thighs, bone-in and skin-on
    • 2 tablespoons olive oil
    • 1 onion, finely chopped
    • 3 cloves garlic, minced
    • 1 cup chicken broth
    • 1 cup cassava flour (farinha de mandioca)
    • 1/2 cup cooked bacon, chopped
    • 1/2 cup chopped green olives
    • 1/2 cup chopped fresh parsley
    • 1 teaspoon smoked paprika
    • Salt and pepper to taste
    • Lemon wedges for serving

    Cooking Instructions

    1. Marinate the Chicken: Place the chicken thighs in a bowl and season them with salt, pepper, and smoked paprika. Allow the chicken to marinate for at least 30 minutes to enhance the flavor.
    2. Sauté the Chicken: In a large skillet, heat the olive oil over medium-high heat. Add the marinated chicken thighs, skin side down, and cook for about 5-7 minutes on each side until they’re golden brown. Remove the chicken from the skillet and set aside.
    3. Cook the Aromatics: In the same skillet, add the chopped onion and minced garlic. Sauté for about 3-4 minutes, or until the onions become translucent and fragrant, scraping up any browned bits from the bottom of the skillet.
    4. Simmer with Broth: Pour in the chicken broth and return the chicken thighs to the skillet. Cover and reduce the heat to low, allowing the chicken to simmer for about 20-25 minutes, or until fully cooked and tender.
    5. Prepare the Farofa: In a separate pan, toast the cassava flour over medium heat, stirring continuously for about 5-7 minutes until it turns a light golden color.
    6. Combine Ingredients: Once the cassava flour is toasted, add the cooked bacon, chopped green olives, and fresh parsley to the pan. Stir well to combine all ingredients, ensuring the farofa is evenly mixed.
    7. Serve: Once the chicken is cooked, plate it alongside a generous serving of farofa. Squeeze fresh lemon juice over the dish for added brightness and flavor.

    Extra Tips

When preparing Chicken Farofa, feel free to customize the farofa by adding other ingredients such as diced bell peppers, raisins, or nuts for added texture and flavor.

Additionally, soaking the chicken in the marinade overnight will intensify the flavor even more. Serve the dish with a side of steamed vegetables or a fresh salad for a well-rounded meal. Enjoy your culinary journey into Brazilian cuisine!

    Ingredients (serves 4-6):

    • 2 pounds chicken wings
    • 1/4 cup honey
    • 1/4 cup brown sugar
    • 2 tablespoons soy sauce
    • 1 tablespoon chili powder
    • 1 teaspoon cayenne pepper (adjust to taste)
    • 1 teaspoon garlic powder
    • 1 teaspoon onion powder
    • Salt and pepper to taste
    • Chopped green onions (for garnish)
    • Sesame seeds (for garnish)

    Cooking Instructions:

    1. Preheat the Oven: Preheat your oven to 400°F (200°C). This temperature will guarantee that the chicken wings become crispy while cooking.
    2. Prepare the Chicken Wings: Rinse the chicken wings under cold water and pat them dry with paper towels. Drying the wings is essential for achieving a crispy texture. Remove any excess moisture by ensuring they’re thoroughly dried.
    3. Make the Marinade: In a large mixing bowl, combine honey, brown sugar, soy sauce, chili powder, cayenne pepper, garlic powder, onion powder, and a dash of salt and pepper. Whisk the ingredients together until they’re well-blended and form a smooth marinade.
    4. Coat the Chicken Wings: Add the chicken wings to the bowl with the marinade. Use your hands or a spatula to thoroughly coat each wing with the marinade, ensuring they’re evenly covered.
    5. Arrange on a Baking Sheet: Line a baking sheet with aluminum foil for easy cleanup and place a wire rack on top (if available). Arrange the wings in a single layer on the rack, allowing air to circulate around them, which promotes crispiness.
    6. Bake the Wings: Place the baking sheet in the preheated oven and bake for about 40-45 minutes, flipping the wings halfway through. Bake until the wings are golden brown and crispy.
    7. Serve and Garnish: Once cooked, remove the wings from the oven and let them rest for a few minutes. Transfer the wings to a serving platter and garnish with chopped green onions and sesame seeds for added flavor and presentation.

    Extra Tips:

For an added depth of flavor, marinate the chicken wings for a few hours or overnight in the refrigerator before cooking. This allows the spices and sweetness to penetrate the meat more fully.

Additionally, if you’re looking for extra heat, feel free to adjust the amount of cayenne pepper or add some hot sauce to the marinade. Serve with a side of ranch or blue cheese dressing to balance out the spiciness, and enjoy this delicious dish with your favorite beverages!

    • 2 tablespoons lime juice
    • 1 clove garlic, minced

    5. Taste and Adjust Seasoning: After mixing, taste the salad and adjust the seasoning if necessary. You can add more salt, pepper, or lime juice according to your preference.
    6. Chill and Serve: For the best flavor, let the salad chill in the refrigerator for about 30 minutes before serving. This allows the flavors to meld beautifully. Serve the salad cold or at room temperature, garnished with additional cilantro if desired.

    Extra Tips:

For added texture and flavor, consider incorporating some toasted nuts such as almonds or walnuts into the salad. You can also substitute the chicken with grilled shrimp for a delightful seafood twist.

If you have leftovers, store them in an airtight container in the refrigerator, but consume them within a day or two for the best quality. Enjoy your Brazilian Chicken Salad With Mango as a revitalizing meal on its own or alongside some crusty bread for a complete dining experience.

    Acarajé With Chicken Filling

    acaraj with spicy chicken filling

Acarajé is a traditional Brazilian street food that hails from the Afro-Brazilian culture, particularly in the state of Bahia. This delightful dish consists of deep-fried black-eyed pea balls that are typically filled with a spicy and flavorful filling. In this recipe, we’ll focus on a delicious chicken filling that elevates the already popular acarajé to new heights, making it a perfect treat for gatherings or a comforting family meal.

The preparation of acarajé may seem intricate, but the results are well worth the effort. The combination of the crispy, golden exterior and the savory chicken filling creates a symphony of flavors that will tantalize your taste buds. Serve it with a side of spicy pepper sauce or a fresh salad for a delightful experience. Let’s explore the ingredients and steps needed to create this mouthwatering dish for 4-6 people.

    Ingredients:

    • 2 cups black-eyed peas, soaked overnight
    • 1 small onion, chopped
    • 2 cloves garlic, minced
    • 1 teaspoon salt
    • 1/2 teaspoon cayenne pepper (adjust to taste)
    • 1/4 teaspoon ground black pepper
    • 1 cup chicken breast, cooked and shredded
    • 1 tablespoon palm oil (or vegetable oil)
    • 1/4 cup green bell pepper, chopped
    • 1/4 cup tomatoes, diced
    • 1/4 cup fresh cilantro, chopped
    • Oil for frying

    Cooking Instructions:

    1. Prepare the Black-Eyed Peas: Drain the soaked black-eyed peas and rinse them thoroughly. Using a food processor, pulse the peas until they form a coarse paste. Be careful not to over-process; you want some texture in the mixture.
    2. Make the Dough: In a large mixing bowl, combine the black-eyed pea paste with chopped onion, minced garlic, salt, cayenne pepper, and ground black pepper. Mix well until all ingredients are incorporated. This will be your acarajé dough.
    3. Prepare the Chicken Filling: In a skillet, heat palm oil over medium heat. Add the chopped green bell pepper, diced tomatoes, and cook until softened, about 5 minutes. Stir in the shredded chicken and cilantro, mixing until heated through. Season with salt and pepper to taste. Remove from heat and set aside.
    4. Shape the Acarajé: Heat oil for frying in a deep pot or fryer to 350°F (175°C). With your hands, take a portion of the black-eyed pea dough and flatten it in your palm. Place a spoonful of the chicken filling in the center, then fold the dough over to enclose the filling completely. Shape it into a round ball or patty.
    5. Fry the Acarajé: Carefully place the shaped acarajé into the hot oil, frying in batches to avoid overcrowding. Fry each piece for about 4-5 minutes or until golden brown on all sides. Use a slotted spoon to remove them from the oil and transfer to a paper towel-lined plate to drain excess oil.
    6. Serve: Serve the acarajé warm, optionally with a side of hot pepper sauce or a fresh salad to complement the flavors.

    Extra Tips:

When making acarajé, it’s essential to achieve the right consistency for the dough; it should hold together well without being too wet. If you find the mixture too loose, consider adding a bit of flour to help bind it.

Additionally, feel free to customize the chicken filling with your favorite spices or vegetables to create a variation that suits your taste. Enjoy the delightful journey of flavors that acarajé brings to your dining table!

    • 1/2 teaspoon garlic powder

    Cooking Instructions:

    1. Prepare the Dough: In a medium saucepan, combine the milk, water, vegetable oil, and salt. Bring to a gentle boil over medium heat, stirring occasionally. Once boiling, remove from heat and gradually stir in the tapioca flour until fully incorporated. This mixture will be hot, so be cautious as you mix.
    2. Add Cheese and Eggs: Allow the dough to cool slightly for about 10 minutes. Once it’s cool enough to handle, add the grated Parmesan cheese and eggs. Mix until the dough is smooth and elastic. It may become sticky but that’s normal.

When making Chicken Pão De Queijo, it’s crucial to use high-quality cheese for a more flavorful result. Feel free to experiment with different types of cheese, such as mozzarella or a blend, to create variations in taste.

Additionally, ensuring that your chicken is well-seasoned will enhance the overall flavor of the dish. For an extra kick, consider adding a pinch of cayenne pepper or some chopped jalapeños to the chicken mixture.

    Feijoada With Chicken and Sausage

    brazilian chicken and sausage stew

Feijoada is a traditional Brazilian stew that’s often associated with hearty gatherings and celebrations. This delightful dish is typically made with a variety of meats, black beans, and a blend of spices that create a rich, savory flavor profile. In this version, we’ll be incorporating chicken and sausage to create a deliciously juicy and satisfying meal.

The combination of tender chicken, smoky sausage, and hearty beans makes for a filling dish that’s perfect for family dinners or gatherings with friends. To serve this dish, it’s common to accompany it with rice, orange slices, and a sprinkle of fresh cilantro. The contrasting flavors and textures enhance the experience of enjoying Feijoada, making it not just a meal, but a culinary celebration of Brazilian culture.

With the right ingredients and preparation, you can bring the taste of Brazil into your kitchen and share it with loved ones.

    Ingredients (Serves 4-6):

    • 1 lb (450g) chicken thighs, boneless and skinless, cut into chunks
    • 1 lb (450g) smoked sausage, sliced (preferably linguica or chorizo)
    • 1 large onion, diced
    • 4 cloves garlic, minced
    • 2 cups black beans, soaked overnight and drained (or 2 cans of black beans, drained and rinsed)
    • 4 cups chicken broth
    • 1 bay leaf
    • 1 teaspoon cumin
    • 1 teaspoon paprika
    • 1 teaspoon black pepper
    • Salt to taste
    • 2 tablespoons olive oil
    • Fresh cilantro, for garnish
    • Orange slices, for serving
    • Cooked white rice, for serving

    Cooking Instructions:

    1. Prepare the Chicken and Sausage: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chicken chunks and cook until browned on all sides, about 5-7 minutes. Remove the chicken from the pot and set aside.

In the same pot, add the sliced sausage and cook until browned, about 3-4 minutes. This will help render some of the fat and flavor from the sausage.

    2. Sauté the Aromatics: Add the diced onion to the pot with the sausage and sauté until the onion becomes translucent, about 4-5 minutes. Then, add the minced garlic and cook for an additional 1-2 minutes, stirring frequently to avoid burning.

    3. Combine Ingredients: Return the browned chicken to the pot and add the soaked black beans, chicken broth, bay leaf, cumin, paprika, black pepper, and salt. Stir well to combine all the ingredients.

    4. Simmer the Stew: Bring the mixture to a gentle boil, then reduce the heat to low and cover the pot. Allow it to simmer for about 1.5 to 2 hours, stirring occasionally. If you’re using canned beans, you can reduce the cooking time to about 45 minutes. The stew is ready when the chicken is tender and the flavors have melded together beautifully.

    5. Serve the Feijoada: Once the stew is done cooking, taste and adjust the seasoning if necessary. Remove the bay leaf before serving. Ladle the Feijoada into bowls and garnish with fresh cilantro. Serve with cooked white rice and orange slices on the side for a revitalizing contrast.

Extra Tips: When making Feijoada, feel free to customize the meats according to your preference. You can add additional cuts of meat like pork or beef if desired.

For a more intense flavor, consider adding a splash of red wine or a touch of smoked paprika. Finally, let the Feijoada sit for a few hours or even overnight before serving, as this allows the flavors to deepen and develop even further. Enjoy your culinary journey into Brazil!
